My only advice (I'll get in before Hugh, Phil, Clyde, etc say it): find a car where someone else has already spent the money. While the restoration journey is fun, it is very expensive and you are unlikely to recover the money spent unless you have John Forcier's DIY skills. A fully or partially restored car will cost more upfront but save you a shed load of money in the long run.
